Gluten Free Banana Coconut Muffins
Certified Organic bananas offer so much flavour! Use your over-ripe ones to make these healthy muffins. Yummy breakfast or lunchbox snack for even the fussiest of eaters!

Gluten Free Banana Coconut Muffins (makes 10 large)
- 1 cup coconut flour
- 1 cup buckwheat or gluten free flour
- 2 tsp baking powder
- 2 tsp cinnamon
- 1/2 cup coconut nectar
- 3 cups ripe mashed banana
- 2 eggs
- 1/2 cup Bonsoy milk (or DF milk)
- 1/4 cup Spiral coconut oil
- 2ml stevia drops (caramel or vanilla)
Mix dry ingredients
Add wet ingredients
Mix gently until just combined leaving small banana chunks in mixture
Spoon into unbleached baking cups & bake at 180C for 25min or until done!
